Koiso Sushi Bar is a cozy, no-frills sushi spot tucked away in Kihei that feels more like stepping into a small, authentic sushi counter in Japan than a typical Hawaiian restaurant. Its modest size means the atmosphere stays intimate, with much of the action centered around the sushi bar where you can watch the chef skillfully prepare each bite.

This is the place to go when you want sushi that’s subtle, refined, and made with an obvious respect for technique and the freshest local fish. The omakase (chef’s choice) is a popular draw — an experience where you let the chef guide your meal with seasonal picks that often include delicacies like uni, ankimo (monk fish liver), and broiled black cod.

Given the care in preparation and the limited seating, securing a reservation weeks in advance is advisable, especially if you plan to drop by during the evening. The vibe is quietly focused, without frills or loud music, making it an excellent choice for sushi enthusiasts who want to savor each piece thoughtfully rather than simply have a meal.

Pairs well with traditional accompaniments like miso soup or a glass of plum wine, and for those who want to go casual, the to-go options offer the essentials like green tea and bottled water. Several locals and visitors note that the service here is warm and genuinely welcoming — you’ll often find the chef sharing stories or insights about the fish and preparation, which adds a personal touch to the experience.

Koiso is best enjoyed by anyone looking for an authentic sushi experience that values freshness and craftsmanship over gimmicks. It’s especially well-suited for couples or small groups who can appreciate the quiet, deliberate dining style. Because the space is small and fills quickly, planning ahead is key. If you manage to get a spot, you’ll find yourself immersed in a subtle yet rich tasting journey in the heart of Kihei.

One of the best meals I’ve ever had. Best sushi I’ve ever had by far. So fresh and melts in your mouth. The service is amazing too! Don’t skip this, and make sure you get a reservation!

Hands down THE BEST Sushi! The Chef is amazing and the service team is as kind and welcoming as can be. We were lucky to get a last minute reservation for 2. Book early. Just plan on coming here and start calling weeks in advance. To the Chef, THANK YOU for sharing your story with my wife and I. And thank you for allowing us to share our story with you and how your sushi has kept us focused for 10 years to get back to Maui to enjoy it! lol

Our last day on me and my husband’s honeymoon and nothing suited it better than this amazing dinner at Koiso Sushi Bar. We were extremely lucky to get reservations last minute as they are usually booked weeks in advanced. From the moment we were seated to when we left it was nothing short of an amazing experience as well as what I would say the best sushi I have ever had. It was our first time trying chef’s choice “Omakase” and it is definitely the way to do it. The fish melts in your mouth and tastes extremely fresh. Each piece you can tell is made with attention to detail and care. If you can, make sure to make this a stop on your trip to Maui.

A brilliant "hole in the wall", completely authentic sushi bar with stunningly fresh fish made by the master Hiro-san from Japan (I know that's redundant, but it's intended for emphasis!). The sushi literally melts in your mouth. I didn't have to chew. The service is brilliant, the sushi to die for, and the ambiance unpretentious and authentic. Call early because they fill up quickly!!!

If you’re lucky enough to get a reservation you’re in for a a lifetime experience. My husband and I are experienced sushi eaters from SF and we’re absolutely blown away. Just call and go, you won’t regret it!

Finally snagged a res and thoroughly enjoyed it! Service was great, prices very reasonable for the experience and sushi all very high quality. The bad reviews are all from whiny people who don’t understand the reservation process. Definitely check it out if you can get a seat.

Most definitely the best sushi restaurant in Maui. It was some of the best we’ve had around the world. It is run by a Japanese couple and the only seats 11 people. Reservations need to be made well over a month in advance at the first of each month and they fill up with immediately.

All the poor reviews for this place is for entitled people who didn't make a reservation. If you like sushi it's a must stop. The price to fish ratio is insanely good without sacrificing quality. In addition, the people there are so nice and wholesome. Great experience. I would've made multiple reservations if I'd known it would be this great. We made ours on the first of the month a month in advance
